Small Hand Foods Launches “Yeoman Tonic Syrup” for Beefeater® Gin

Colliau was approached via an acquaintance to make a Tonic Syrup for Beefeater due to her (as she puts it) “cocktail nerd” reputation. Created with exacting care, scientific precision and considerable research, her syrups are highly acclaimed by discerning palates across the world. In particular, Small Hand Foods’ Orgeat has garnered much attention for reviving a rare and delicious product in its original form using real ingredients.

For this project, Colliau was thrilled to work with Beefeater’s eminent Master Distiller Desmond Payne. Through an iterative approach, which Colliau describes as, “conversational and collaborative,” a final composition was established based on the original Small Hand Foods Tonic Syrup. The Yeoman Tonic Syrup has several tweaks to the recipe and incorporates new ingredients such as bitter orange peel, which are said to provide a broader, more complex range of bitterness.

Tonic syrups featuring natural ingredients and no artificial sweeteners are gaining popularity as a superior option to tonic water due to the disconnect between tonic water and high quality gins. For many, suffering artificial flavors and unbalanced sweetness from tonic water in a drink that contains nuanced gin botanicals simply doesn't match up. Every palette truly is different, and several cocktail authors have noted that many consumers miss out on what could be a great drink simply because they don’t enjoy the flavor of tonic water. In addition, tonic syrup provides control over the ratios in the final drink, allowing for greater personal customization.
