Gourmet and fine dining lies at the heart of our hospitality. Innovation and creativity have become an essential ingredient in the kitchen. Sharing experiences of the gourmet kind, the Ladies’ Wing of the Indian Merchants’ Chamber organized `Ready – Set – Cook’, an evening of fun and learn to make some extraordinary vegetarian cuisines by renowned Chef Mrs. Asha Khatau.

Setting the tone for the evening, Mrs. Leena Vaidya, President, Ladies’ Wing of Indian Merchants’ Chamber remarked, “Cooking requires confident guesswork and improvisation, experimentation and substitution, dealing with failure and uncertainty in a creative way.”

From a time when the woman of the house spent her time in the kitchen while entertaining guests, the new diktat of entertaining says the woman has to be at the side of the man to welcome, mingle and look after the guests. Sharing her views on this aspect, Chef Mrs. Asha Khatau opined, “This means the woman today has to be more organized. A lot of thought and planning has to go into deciding menus and it should be decided depending on a woman’s capacity to manage. An ideal menu should be related to the occasion, season and the demographic profile of the guest list. A little experimentation and innovation can bring about the much desired wow factor.”

An ideal menu has to be a blend of visual appeal, flavor, taste and nutrition. Dining tables are undergoing a sea change from the traditional meals heavy in fat and calories, the trend now is on meals low in fat and calories yet high on nutrition, taste and flavours. For example the use of Couscous as a condiment has given way to Quinoa, which is low in carb yet high in protein. “The ideal setting should have a lot of scrumptious salads – tofu, paneer or potato based, homemade tortillas, multi grain breads and lots of condiments on the table, allowing a guest to cater to their individual taste. The days of soft drinks, fruit juices and alcohol as a welcome drink are a thing of the past. Flavoured water is a healthy alternative and easy to manage on one’s own. All one needs is to concoct a combination from orange or lemon slices, mint, celery sticks or fruits like strawberry and kiwi, add them to a decanter of water and keep it overnight for it to soak in the flavours. Such simple, innovative and creative insights make cooking a joy whilst keeping an eye on health and nutrition,” added Chef Mrs. Asha Khatau.

The event focused on the finer nuances of entertaining and menu planning, with Chef Mrs. Asha Khatau explaining and demonstrating on how to make a Thai Crunch Salad and sharing recipes for some salad dressings.

Author of `Best of Epicure’s Vegetarian Cuisines of the World’, which won the `Best Vegetarian Book in the World’ award in 2002, at Gourmand World Cookbook Awards (considered to be the Oscars of the Cookbooks category), Chef Mrs. Asha Khatau has written four more books, namely, `Vegetarian Chinese’, `Vegetarian Italian’, `Vegetarian Cuisines of India’ and `Delectable Desserts of the World’, which won an honourable mention at the World Media Awards 2006 in the `Best Foreign Cook Book in the World’ category.
