Sample Father’s Day Recipe:

Grilled steak with dark ale and mustard sauce

1 ÂĽ cup beef stock
4 strip loin or tenderloin steaks, 6-8 oz each
ÂĽ tsp cracked black pepper
ÂĽ tsp fresh rosemary, chopped
½ tsp olive oil
ÂĽ cup dark ale
1 tsp green peppercorns
2 tsp Dijon mustard
1 tsp butter, cold
½ tsp sea salt
½ tsp ground black pepper

Place the stock in a small saucepan over high heat. Cook until reduced by half. Set aside.

Season the steaks with cracked pepper and rosemary. Heat a large heavy frying pan over high heat. Once hot, add oil and beef; sear steaks on all sides. Remove steaks from pan and set aside.

Deglaze the pan with dark ale. Add the reduced stock and green peppercorns, cooking on high heat until sauce is reduced to half. Remove from heat and whisk in the mustard and butter. Adjust seasoning with salt and pepper if desired.

Preheat grill to high heat. Grill steaks to desired doneness and top with warmed sauce.
